Quinoa salad…..

Quinoa is a staple on our vessel. It’s a grain so it’s stores incredibly well, it’s great for you, and you can pretty much mix anything in it. I love this recipe below. Even my kiddos eat it;)

What you’ll need:

  • Quinoa
  • Water (for boiling quinoa)
  • 2 or 3 small tomatoes (chopped)
  • 15oz chickpeas (drained and rinsed)
  • 3 cloves garlic (minced)
  • Three or four green onions (chopped)
  • Juice from two limes
  • Tablespoon of olive oil
  • 1/4 cup Parsley (chopped or shredded)
  • Salt and pepper to taste

Directions:

Following instructions on making the quinoa on package. Add all the ingredients listed in a big bowl. Add quinoa, have a margarita and enjoy!
